Another NYT/Maangchi home run. I cut the red pepper flakes in half otherwise the dish would’ve been too hot for SWMBO with the gochujang in it also. I highly recommend:

I make this all the time. It is one of our favorites (although I often leave the cheese off my side). Edit: I have also made it with chunks of pork tenderloin and chunks of salmon. Both were excellent variations.

Bet that would be awesome with a giant wad of cheese wiz. Just thinking outside the box and recovering from my second femur break in 5 months. The first one was not so bad but this second one was a radial fracture, I snapped it and then twisted it half way around. Brutally painful. When the emt's showed up they each lifted me off of the ground (slipped on the ice covered granite steps off of my side porch) under my armpits, and I was responsible for carrying my broken leg onto the gurney. The bottom of my leg was pointing in one direction and the top 3/4 of my femur was pointing in the opposite direction. Because I have both a knee replacement AND a hip replacement, I laid in the hospital for over three days while they tried to find a surgeon that could fix it, given the two replacement joints. Longest three days of my life. I ended up with a metal plate on my femur, straddling from my replacement knee, all the way up to my replacement hip. There are over 36 screws holding my femur to the plate and twelve weeks later I'm still using a walker. When I break bones I shoot for a hole run.
