    A sorry plated shot, to include the carrot soufflé, and Yorkshire pudding. The carrot soufflé was new, but will definitely be repeated. I’ve made better Yorkshire pudding, but it still went over well. 


    Great work.  That ROL is a treat and the Yorkie looks pretty good to me - and I've had a few!

    Wow! Nice spread! That veggie assortment looks delightful. And now I feel the need to watch a few Andy Griffith episodes. @caliking can you explain your beet towers? I’m a huge beet fan and have never seen that concept before.

    What an impressive collection of cooks above.  Top shelf banquets do not do them justice.  Awesome skills.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    @BeanHead - the beet cairns are sliced roasted beets,  stacked with goat cheese between each slice. 

    Thin the goat cheese with a little honey. Pipe a bead along the circumference of a beet slice, stack another slice on top, and keep going. 

    Made these once before, and forgot how good they are.

    Lol. Billy’s pepper jack boudin balls sold hot and fresh is one of the best things I have ever eaten but overall the Best Stop is where it’s at. Don’s is a distant third in my book.

    I am always flying to NOLA and driving to Lafayette and that area... I really hadnt been wanting to make the 6.5 hr drive nor trying to fly it back w me.

    Then I heard there is a Best Stop in Katy so on a trip back from Houston I want and dropped a few $$ (so SWMBO) thinks on meats.   That was the first one I cooked and I swear it was normal heat level but it had some sneak up and tell you about it heat- but that didnt stop anyone.

    Still got Crawfish version and a few mini link packages and Andouille to cook up.   I get to Houston 3-4 times a year so now on the way back I'll be taking the I-10 route for both Best Stop and Weikel's Klobasneks (although I prefer Hruskas).
    XLBGE, LBGECharbroil Gas Grill, Weber Q200, Old Weber Kettle, Rectec RT-B380, Yeti 65, Yeti Hopper 20, RTIC 20, RTIC 20 Soft Side - Too many drinkware vessels to mention.

    @caliking Thanks for the earlier well wishes, pretty rough here with one grandson picking up HFM from daycare and sharing it with his parents and baby sister. Had to do takeout for them.

    Looks awesome. I like the brussels and bacon.  What’s else are you adding ther?  Did you just roast the whole thing at 400 or so for 15 minutes?

    Thanks for the beet idea @caliking I’m going to certainly be stealing that but probably going smaller for appetizer sized bites. So excited.

    Nice cook @Canugghead and excellent idea at possibly adding sweet potato to the beet stacks. Was thinking of alternating between golden and red beets, but sweet potato would be a nice texture change.

    Ooh yah @caliking it is worth the trip, such a good store. Make a road trip so you pass through College Station and be sure to grab some goat from the meat lab on campus (they get all the Houston livestock animals that have been fed well and loved a bunch, the flavor shows) and stop in Snook to visit the Slovacheck factory store. They have some head cheese and liverwurst that are not available elsewhere. Also an on-staff butcher who actually knows what is going on with a carcass.
