Top Sirloin Cap

I picked up some top sirloin cap at Costco earlier this week and dry brined it for 2 days. 

Roasted at 225 til it was 125 internal and then sears it. I probably should have pulled it a little sooner for a medium rare. 

Served with homemade chimichurri and beet tallow roasted potatoes with asparagus. A great Sunday meal.

i enjoyed a pour of JDSBBPR at 138.8pf that was from the Coy Hill warehouse.
