Iberico collar steak

Our daughter gave us a piece of Iberico collar steak to try...

SV'd, rested, brushed with homemade brown butter, then seared over screaming hot chimney, about 30 sec each side...

Chimney inferno warped the air fryer rack...

Served with homemade mango chutney, twice baked potato, beet salad with cottage cheese and walnut (used precooked beets from Spain). Only seasoning on pork was smoked sea salt after plating, tasted real good but don't know how to describe it. Found a local butcher that carries a good assortment of Iberico cuts, will be trying more.

The best measure of a cook is whether it “tasted real good”, IMO.I love beets, and that salad looks great.Too bad about the air fryer rack, but it looks like it was worth the sacrifice. 🙂

Magazine quality photo right there. Definitely graced that pork cut. Exceptional groceries.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

The rack was just a surplus in my bbq supply cabinet, no big deal and it's still usable.canuckland -

Was going to fire up the XL with lump reducing ring, then I remembered this brand new Weber chimney starter, added too much charcoal and stoked it with hair dryer! The small steak was in SV for about 1h 45m at 135F.Stormbringer said:The end result looks great even though kit was damaged en route
