Help my egg looks funny….

Ok well I finally got the egg sweats.  2 years of living in humidity it finally happened after 13 in the desert, thought this was a myth.  

Had a botched 4 pound ribeye I bought I a Christmas time (that’s its own story, but it was free after a strongly worded email.)  Gave the dog the bone and had some semi thawed steaks dry brining most the day.  No smoke just salt.  Just kinds grilled.  After a rest and a slow roast. 



Served with some crispy parm potatoes.  (Concept is good needs some work) and sous vide carrots.  I don’t have any money shots the natives got hostile but I have one move triangle shaped steak left for later.

    We left late 2022.  Live in Atlanta now, humidity is a thing.

    I've read somewhere that Simple Green can clean that up . . . not sure

    do that ind let rain really soak into the ceramic, the grease will steam from the inside out thru the ceramic. pretty much a given for my egg that lives thru mud season in maine.  next hard rain will wash it off. i will light the egg when i get to the camp in the spring just to dry it out, wet ceramics take for ever to heat up and stop smoking so sometimes i plan a cook on saturday but just go through a drying process the night before

     I think we can take it a step further, for example, heavily coat the inside of your egg with Simple Green, and then do a clean burn to push it through the pores!

    Add some cayenne and lemon and maple syrup while you're at it, give your egg a real cleanse
