Pimento Cheeseburgers and “Cava” Veggies

Nothing here done on the egg, but you could easily adapt.



I’ve been in the mood for veggies lately and threw this together. Inspired by a copycat version of Cava’s roasted veggies. It called for pomegranate seeds, but food lion didn’t have those. Used walnuts with dried cranberries instead. Veggies were brussels, potatoes, carrots, butternut squash, red onions, and herbs. Tossed with EVOO, salt and pepper. Went in the oven at 425 f for 25-30 minutes(ish), tossed halfway through and also pulled the herb stems out halfway. Recipe I found said 15 minutes, but they were also using 2 baking sheets, and I crowded it all on one huge baking sheet. Hence the extra time.


Also made up some pepper jack pimento cheeseburgers in the cast iron skillet.

Once the veggies finished, tossed on the walnuts w/ dried cranberries and some Panera brand vinaigrette.


The wife, who usually abhors brussels, actually enjoyed these. Will be repeated! 😋

Thx fellas. Hoping they heat up well. Should be a good meal prep option. I was hoping to find a pomegranate or at least a cup of pom
seeds. Will try that next time in lieu of the dried cranberries. -
Don't know if this helps, but Indian stores often have whole pomegranates. I think Mexican/South American stores have them, too.

@dbCooper , it is hard to beat a simple burger.@caliking , believe it or not I actually noticed pomegranate seeds in Walmart the other day . Hate going there though, so opted to try picking them up in food lion since I was there anyway. I do need to try specking out some international markets nearby though, so thx for the tip!
