Chicken Pot Pie

In the oven right now. Not terribly advanced but the aim was to use the leftover egged chicken thighs.

Chicken Pot Pie
1 2/3 cups frozen mixed vegetables
1 cup of chopped leftover chicken
1 cab condensed cream of chicken soup
1 cup Bisquick mix
1/2 cup of milk
1 egg.

Mix the first 3 ingredients and put into a pie plate. They say glass but I used a greased cast iron pie pan.
Mix the second 3 ingredients and poor over the first mix.
Bake at 400F for 30 minutes.

Audibles called, added a half cup of left over plain yogurt to the last three ingredients and added a scosh extra Bisquick flour to adjust. Used a can of cream of celery instead of cream of chicken, a variation in the notes on the recipe. Cream of mushroom was also suggested as a variation.
