Chicken Pot Pie

In the oven right now. Not terribly advanced but the aim was to use the leftover egged chicken thighs.
Chicken Pot Pie
1 2/3 cups frozen mixed vegetables
1 cup of chopped leftover chicken
1 cab condensed cream of chicken soup
1 cup Bisquick mix
1/2 cup of milk
1 egg.
Mix the first 3 ingredients and put into a pie plate. They say glass but I used a greased cast iron pie pan.
Mix the second 3 ingredients and poor over the first mix.
Bake at 400F for 30 minutes.
Audibles called, added a half cup of left over plain yogurt to the last three ingredients and added a scosh extra Bisquick flour to adjust. Used a can of cream of celery instead of cream of chicken, a variation in the notes on the recipe. Cream of mushroom was also suggested as a variation.
Pictures tomorrow possibly.

Top of the crust is a bit dark. Maybe the yogurt?

Sounds like a hearty dish and a good use a left overs.XL BGE

Dirt simple, and quick. The recipe I use definitely is not either of those. And as a result it doesn't get made often.Somewhere on the Colorado Front Range

Looks good from here! I would imagine the 400 temp and the yogurt contributed to the dark look. How’d it turn out?

Tasted fine a slight tang from the yogurt. Maybe a bit like sourdough? Anyhow it only takes about 15 minutes to throw together and 30 to bake. Provided that the chicken is already Egged but rotisserie from the store would work.
