What Do I Need To Know About Ground Brisket?

I picked up a whole brisket a few weeks ago from Sam's on clearance. Unfortunately by the time I trimmed it up it wasn't worth saving to cook as a whole brisket. (I had a feeling that it would end up like that given the shape and what it was hiding) So I ended up grinding it up.
Is there anything I need to know about using it as ground beef? I need to make some chili before this weekend. I'm thinking I'll use part of it for over the top chili. Anything I need to know? Thanks

i use ground and add 1.5 inch cubes and simmer til the chunks start to fall apart. pretty much the same with sirloin, chuck etc. for chili. only thing i do different is grind it coarse thru the 1/2 inch plates on my grinder verse the finer ground supermarket burger
fukahwee maineyou can lead a fish to water but you can not make him drink it -
We get Brisket Burgers from the local HEB often. Hamburgers are always a good option.XLBGE, LBGE, Charbroil Gas Grill, Weber Q200, Old Weber Kettle, Rectec RT-B380, Yeti 65, Yeti Hopper 20, RTIC 20, RTIC 20 Soft Side - Too many drinkware vessels to mention.

Just Vote- What if you could choose "none of the above" on an election ballot? Millions of Americans do just that, in effect, by not voting. The result in 2016: "Nobody" won more counties, more states, and more electoral votes than either candidate for president. -
I’d try to separate the fat as much as possible and mix it back in at a 15-20% ratio.

I didn't know what "Brisket Boudin" was, so I looked on EweTube and "Chubs" filled me in:

I hope that sausage is beef. I’m pretty sure you aren’t from Springfield, but that cute puppers photo makes me concerned.alaskanassasin said:Mark_B_Good said:Brisket burger is fantastic. Sausage is great too. Look up a South African recipe called Boerwors.
