Spanish Pork Rice and Cookies

Had some items heading towards spoilage so tried to get creative and use ‘em up.
Landed on Spanish pork rice, using some ground pork from the standing freezer and veggies that were calling out to be used. My father used to make Spanish beef rice when I was growing up.
Served this with some high fat sour cream.
Followed by wifey’s cookies.
