Crispy crunchy chicken skin

This was crispy crunchy and just awesome so I had to share.
Dry brined overnight with rub of 2 parts kosher salt and 1 part baking powder.
For binder mix 2tbsp mayo and 1tsp dijon mustard. Slather a thin coat over chicken, then apply a generous amount DP wonder bird.
Ran the egg Indirect at 400°-425°
This rendered the skin perfectly, you could hear the crunch.

Way to get it done. Great colour (nod) right there.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Nice one. I do the same thing, including the Wonderbird, but haven't tried it with the mayo / mustard combo. That's happening on Sunday.-----------------------------------------------------------------------

Cooked this tonight ... winner! I didn't need to drain the bird partway through, it stayed dry. I used American mustard rather than Dijon as SWMBO is not a fan. This was incredibly good, I overdid it with the rub so will scale back next time.
