“Viral” Party Ribs

For those of you on other Social Media sites, you might have seen what are being called “Party Ribs” a lot lately. Basically just ribs that have been cut in to single bones so they cook faster and have rub coating the entire rib, then usually finished like burnt ends.
So do a buddie’s birthday yesterday, I figured I’d give this method a shot. Sliced 4 racks of babybacks in to single bones, seasoned them, then on to the Big Green Egg indirect at 300°.
After about an hour, I flipped the bones and let smoke for another hour. Pulled the ribs and gave them the burnt end treatment in a pan with butter, bbq sauce and brown sugar. Covered with foil and back in for about 30 minutes.
I didn’t even need to put the ribs back on for the last step…they were already tender and friggin’ delicious!!!

Very nice looking ribs. I have a rack of spares that this treatment will be my next cook, once I get all the snow and ice off the Egg, here in northeast Ohio.

Temps correct, but they’re indirect for the majority of the cook. You can always hit direct at the end to set the sauce, but not really necessary. EGGspander rack was used because I couldn’t fit all the ribs on one rack, but doesn’t really need to be raised if you can fit on the main grate.Mark_B_Good said:Looks great, so 2.5h in total at 300F? oh, yeah, I saw a photo and thought direct, which then led me to believe you raised the grill to avoid burn ... but now I understand better. It's much easier indirect ... and if you are putting them in a pan after a-la burnt ends method ... no need to go indirect. Just 2h of smoking, and 0.5h in the pan ... and done. Sounds great! It cuts my 3-2-1 method time in half.cmac610 said:
