Let’s talk corn…
I want to freeze corn this year so I can have corn in the offseason. Prices can be as much as $2/ear for crap in the offseason. What is the preferred way to freeze corn? I see variations of additives to the blanching process like sugar. Should I stick to plain old water? Any issues using food saver bags? -

I’ve blanched and cut off the cob. Cooked down and iced bath before vac pack. I’ve also vac packed whole ears. Haven’t noticed quality drop off on whole ears vs freezing in ice and a ziplock. We usually consume everything within the first 4-6 months thoDoubleEgger said:Let’s talk corn…

One year my mom brought a case home from the farm stand and spent all day shucking, smearing with butter (honestly, it was probably some kind of store brand margarine) and then wrapping in waxed paper and then foil. Mom wasn't a fan of plastic wrap or ziplocks, waxed paper worked just fine for her. Into the freezer and we ate it over the winter.She was big on boiling the life (and sugar) out if it, so the butter and the whole effort was pretty much wasted. Last year we blanched the whole ears in salted water. Then we let them cool a bit and packed them in freezer bags. The key is to get them blanched as fast as you can after picking. Recruit a crew to help. My aunt Lynette uses a gas burner in her outdoor kitchen and usually has kids and grandkids to help. With the extra help she cuts it off the cob.

If you're going to have a lot of people eating corn on the cob, get a paint roller tray, wash it up, then fill it up with melted butter, as the corn gets done, each one can roll their cob as far as they want. The one that utilizes their edible napkins (bread) ties with the one with the one with the most in their elbow cup, BBQ's are spozed to be fun.

Blanch it. Keep it on the cob or cut off. I cut off the cob and vac pac with butter, s&p. That way it goes straight into the sv to reheat and eat
