How many racks are you cooking? I’ve done 5 laying them flat on my XL

    Spares or b/b?

Do you have a rib rack?

There are pictures here of spirals of racks inside Larges as well as XL and that method just means cooking on their edge and not laying flat. Granted a huge number of coiled up racks will be a PITA to turnover some eggers are up to that challenge!

Like this, and if you remove the water pans, you can get more in.
This setup works for 9 full racks, and probably one more rack cut in half, put halves
where the two water pans are in this photo, so 10 racks total.

Did they spiral coil them from outside to center?  I guess that is a way, but you want seperation between for smoke penetration, so maybe they used tooth picks?

he just flipped them back and forth, lined the top of the dome with foil. i think he did 13 chickens one time too. my bad though, only did 20, there was room on top for more ;)  its tight but it looks like smoke was still flowing thru

One egg for alot of people. I've seen Famous Dave's do something similar at events, wrap them all up in foil after cooking then into a cambro while bringing temps way up. Unwrap a couple racks and finish over high heat while flipping and mopping with a sugary vinegar sauce to build a quick crust. makes for a decent show on an open grill with fire flaring up for a crowd. they probably did a thousand racks finished this way over a couple hours
