    As for the cheese choice my favorite is 1 slice American yellow and 1 slice of paper jack.

    I love a good lean bison burger. If I catch my own bison, It'll be like 70% from that giant hump behind the head and 30% from the very back, just before it slants way down and turns into A$$. Anything above the tail is usable. If I go out hunting and come home bison-less I'll buy one of those square packages of bison meat at the Piggly Wiggly and make bison burgers anyway, it just won't be the same without the hump meat.

    Cheese, red relish, onion, and yellow mustard.

    they dont have the yellow/orange american cheese displayed in the deli here. could be a law or something =)

    I prefer to remove the slice of paper from the cheese before I put it on the burger  ;)

    Cabot Hunter’s is a great balance point of having some good sharp flavor while still getting a good melt on the burger. I find once you get into the reserve aged sharps they have a tendency to go gritty on the melt.

    Hoffman sharp is similar to hunters, a little less sharp but is deli sliced. Alor cheaper as well. Hunters is top notch if you can find it in the paper wrapper, plastic changes the texture.

    American here is white, orange is hidden behind the display case...it's creepy. We still get the good Cabot wheels under glass. They chip pieces off, that's the good stuff. A chip of cheddar and a Cortland apple in the fall is hard to beat

    I have always wondered about picture perfect burgers like that!  I ALWAYS slap my head wondering how they ever get such a large, cold slab of bleu cheese to rest and NOT melt on a hot burger! Must be "cold frame photography" art at it's best!!! =)=)=)
