Fat Cap Up or Down?

Picked up a 5 pound Picanha for father's day. Should I grill it with the fat cap on top, or on bottom?

If you are grilling it, you will be flipping it, so it doesn't really matter. I have never smoked picanah, only grilled so I can't help there. Search Guga Foods on YouTube. He loves picanah and had lots of opinions on cooking it.

I just made two Prime picanah steaks last night. In order to solve the mystery of fat up or fat down, I did it on my rotisserie. It was FABULOUS.

When in doubt Accelerate.... -
if you are going to eat the fat, then it will need a bit of time down over the fire. If not going to eat the fat, then concentrate on searing the 3 other sides to perfection.

So my bourbon group is fond of pichana. Really fond. We usually slice it, sear over high heat on a BGE or gasser…..trim the fat, eat medium rare with a little finishing salt
