I have a total cheat code for the bread. There is a Manresa Bread near our house. I just got a loaf of wheat from them, hit it with some EVOO, then minced garlic, then two pats of butter. We just made Mattys eggplant parm - step by step - he always gets me laughing - damn tasty - kids loved it. My fav part was using my bluestar oven to fry with new 600 CFM Hood Vent. Complete game changer, for frying. Thanks for the heads-up OP.
