New toys for the cook

Ordered two hand hammered knives. A breaker trimming knives and a brisket carving knife. S30v steel. Well balanced. A little thick but we will see. Razor sharp.
Came with leather cover sheaths. Excited to try em.

Come to think of it, my Spyderco is S30V too.Regarding the OP's knives, I wouldn't think it was a good alloy for filet/carving knife, one that you would want thin and flexible. But maybe that's not how that knife works.______________________________________________I love lamp..

My internal thoughts were the same however sight unseen worth the gamble. I sure will let you know though. It's solid for sure but it's not ment to be a filet knife either. If it will slice a turkey.chicken. or brisket clean I'm happy. I want to get translucent thin.
