I sautée my veggies (sweet onion and baby Bella’s) and meat (chopped ham or sausage) then pour the 3 eggs (with a splash of milk) on top. I use a lid and low heat. As the bottom sets I pull up edges and let the runny egg get under the omelette. As it gets near finished I slide it on to a plate and use the plate to flip it wet side down into the pan. I immediately add cheese and put on the lid for about 45 seconds then fold in half and onto the plate. Depends on if those chemicals are on a precursor list that they take very seriously depending on the quantity. I avoid those. My nitrate/nitrite purchases are limited to Prague powder 1/2.Ozzie_Isaac said:
