I sautée my veggies (sweet onion and baby Bella’s) and meat (chopped ham or sausage) then pour the 3 eggs (with a splash of milk) on top. I use a lid and low heat. As the bottom sets I pull up edges and let the runny egg get under the omelette. As it gets near finished I slide it on to a plate and use the plate to flip it wet side down into the pan. I immediately add cheese and put on the lid for about 45 seconds then fold in half and onto the plate. Green onion, sprinkle of cheese, parsley, S&P and a dollop of sour cream on top.XL, Small, Mini & Mini Max Green Egg, Shirley Fab Trailer, 6 gal and 2.5 gal Cajun Fryers, BlueStar 60" Range, 48" Lonestar Grillz Santa Maria, Alto Shaam 1200s, Gozney Dome, Gateway 55g Drum
