Cream cheese

Started a batch of cream cheese today, 4 liters of 10% milk, 1/4 tsp of mesophilic culture and 4 drops of rennet.  It'll sit on the counter till tomorrow morning then into cheesecloth to drain for 8 - 12 hours.  Only going to add kosher salt as I want it for Christmas, was going to add chilies but no just keeping it plain.
