I like to take them, stretch them a little. and then cover in dry rub. Smoke it and use that for rotel. People go nuts over it.
Also, do the same thing but dress it in jalapeno pepper jelly before taking it off and put it back in the smoker to set like bbq sauce. that makes a hell of a finish if you aren't using it for a dip.
