A little relaxing at the ranch

We took a long weekend and headed down to the ranch to relax and have some fun.
Saturday was time to break out the Pit Barrel and smoke a brisket.

Four hours in and it was looking pretty good. Time to pull it, wrap it and let it go for a bit longer. I recently heard of a method called the "foil boat" on Chud's BBQ on YouTube where you only halfway wrap the brisket so the bark doesn't get soft. I thought I'd give it a go here.

Done. Love how quickly you can smoke a brisket on the PBC. Started it at 11, ate by 6, and was out in the fields dove hunting after.

Sunday was pizza night. Plain cheese for the kids.

Brisket and some home grown jalapenos that were way too spicy.

All in all a good time and I really hate that I'm sitting here at work again. Weekends are never long enough

+1 for the foil boat method, has really helped my brisket game. However I wrap mine in butcher paper first and then the foil boat. However yours looks great so it's definitely working for you as is.

Great cook and results right there. How many lbs was that brisket?Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

speaking of foil boat I did a sort of hybrid version few years ago…foil boat with broth, covered with butcher paper.

It was about 14.25lbs pre-trimmed. It's been difficult finding brisket lately, and the wife found this one. I told her to keep it 15 lbs or under just because of the hanging height in the PBC. The last one was over 16lbs and the tip of the flat was just barely above the coals and was unedible by the time it was finished. And with only 4 adults and 3 kids under ten it was more than enough. @Griffin the cooks look great but how were the dove? I have heard mixed reviews due to the freeze. Have a hunt in a couple weeks—south zone.LBGE, 28” BS, Weber Kettle, HCI 7.8 SE Texas

My Brother In Law got two shots off and hit one.
