Chicken Dum Biryani

Had a lot of fun with this involved cook, following this recipe:

Chicken Dum Biryani Recipe | Hyderabadi Chicken Biryani | Chef Sanjyot Keer | Your Food Lab

I have a captive audience of the 3rd graders I teach, and show them my BGE cook photos.  They often share recipes with me they want me to try, and this is the latest.  The hardest part was tracking down the ingredients that I didn't have.

I typed up the recipe if anyone is interested.  It is basically a layer of rice followed by the meat (cooked) and then another layer of rice, covered and cooked for 30 minutes.  One of the steps was to steam ghee over live coals in a small cup on top of the rice before the bake.

This was a 1/2 recipe.  I actually made it a couple of weeks ago on the stove, but wanted to try it on the Egg.

Fried onions:

Chopped up some bone-in thighs and drumsticks, and the ingredients for the marinade:

Ingredients for the rice:

Using my 5qt Dutch oven, I cooked the meat in the lid on my Small and then finished the cook on the Large:

Thanks for looking!

I know its early, but you win the forum today.

Biryani is a special dish. Many folks have given up making it at home, and order out when they get the itch. Yours is just about as authentic a version as I've seen.

    Fabulous cook.

Thank you, it was fun.  Apparently meant to be eaten by hand and served with beer, according to the father that sent me the recipe!

It is great to have access to them.  Central Market has a bulk spice section, so buying small amounts is much cheaper than buying those little spice bottles!

  • That looks absolutely fantastic! And I think it's awesome that you are helping to inspire your 3rd graders to become interested in cooking.
Happily egging on my original large BGE since 1996... now the owner of 5 eggs. Call me crazy, everyone else does!

I lived in Bahrain for awhile and really want to make this. This looks like the best written up version I've seen yet.
