    You got it...leftover corned beef and cabbage.

    Now, for the next question...since I still have more left over beef I'd like to make some real corned beef hash this Sunday. Anybody have a KICK BUTT recipe they will share?

    We make boiled dinner

    then hack up the leftovers

    (N.b. There’s usually no cabbage or turnip leftover and so the hash is corned beef and potatoes and stray smaller bits of veg)

    Thanks, J...I threw away any l/o cabbage and I knew to carefully dice up some white potato. along with the corned beef, I just wondered if I had over simplified corned beef hash.

    "Hack up" is an apt preparation technique given the consistency of the final product.

    Opening a can (oh the horror) of corned beef always reminded me of opening a can of Alpo for the dogs (when I had dogs).

    LOL, Nola...but didn't the smiling pocket of two poached eggs looking back at you make it look better than Alpo?

    I think it is literally nothing more than using up the leftovers. 

    I am sure there is some offical diner recipe... but not here. 

    I have found that in cooking it again (two eggs sunny side up or over easy, on top of the hash), I have to spread it out and cook a lot of water off. Then when it stops steaming, push it together on one side of the pan. Let it sear fairly hard and brown. Then try to flip it in one mass (big spatula).

    when it gets close to done, i crack the eggs

    that way I get a good sizeable amount of it with browning top and bottom, rather than a loose mess.  But it still doesnt quite hold together like diner hash. 

    I wonder if they have a binder. 

    I actually thought of you when I hashed up the leftovers into about six single servings, and froze them

    With our leftovers I sometimes like to change up the flavor. With corned beef I might chop it fairly fine, cook some of my par-cooked diced potatoes that I keep in the freezer, add some heat, salt, garlic, onion, cumin and cilantro, then at the very end, add the chopped beef. 

    With a few sunny side up eggs so the yolks flow over the hash, I’d serve it with a glass of cold milk and a side of sourdough toast.

    if you flip too soon it wont crisp, diners will have a mountain of it on the back of the griddle and pull out a single serving at a time, spread it out and brown and crisp it. i like canned potatos over the ones from the boil, the boiled ones fall apart. red flannel has roasted beets added as well, not canned.  havent seen that for along time

    last time i had it was up near millinocket in the middle of no where, they had creamed salmon with peas on toast as well.  you could get it with a schlitz beer

    I bet ya, that left over beef will taste amazing in tacos with some sriracha mayo/sauce.

    Thanks all...today I diced up the remaining corned beef in to tiny pieces. By weight I have 5.75 oz. Also based on @fishlessman’s recommendation I bought a can of peeled potatoes. Perhaps I misunderstood fish...looks like this can is raw potatoes, but I intend to dice them into TINY pieces to mix into the corned beef.

    Best news? Wifey says she is looking forward to my Sunday brunch (aka experiment).
