Wanted to go somewhere different with the pork loin, so I thought tacos
Sliced the lion in quarter inch slabs then marinated it for two days.
Used a piece fo pineapple to set my bamboo skewer in allowing to impale the slices making a stack. That was transferred to the egg an cooked at 335 for 1 1/2 hour
Sliced right off the skewer on to tortilla with a little pineapple.

Forgot the pineapple

They were delicious just the meat and pineapple but aon my third one I add some guacamole and cheese.

3 tbsp ancho powder
1 tbsp garlic powder
1 tbsp cumin
1 tbsp dry oregano
1 tbsp kosher salt
1 tbsp ground black pepper
3 envelopes of sazon Goya
3 tbsp tomato paste
2 tbsp brown sugar
1/2 cup white wine vinegar
1/4 cup white balsamic vinegar
Juice of one orange
