It would be helpful to tell us what you put on them.For example, foods (vegetables) with anthocyanins can turn blue/purple in the presence of an alkaline pH. If you take some of that blue/purple and add vinegar, it turning red (or more red) would help confirm that's what it is.

When I googled “purple pork chops” and scrolled through images - I saw your picture. Other than that, obvious stuff like a red wine brine, or purple cabbage. Freaky!+++++++++++++++++++++++++++Austin, Texas. I'm the guy holding a beer.
