New favorite sandwich: Baltimore Pit Beef

First, Merry Christmas to all as it has been a while since I was here.
How this all started. There is a carry-out place near me that has this pit beef sandwich that we recently discovered and found it to be delicious. I found out that in this part of MD, it is called Baltimore Pit Beef. After doing some additional research, this seemed to be very easy to make and with the Joetisserie (Father's Day/Birthday gift), it seemed like something I should try. Unfortunately (or fortunately for me) we now like the BGE version better than the carry-out place. I would say that without a really good slicer that can slice this thing paper thin, it could be tough.
tools I use:
XL - BGE
Joetisserie (Father's Day/Birthday gift)
Avantco SL309 slicer
3-6lb Eye-of-Round.
Set up the Joetisserie and push all the coals to the back. Keep the egg between 300-350.
Season with Kosher salt, pepper and a bit of garlic powder or garlic salt.
Remove from the spit when it gets to ~120. Let rest up to 30 minutes before slicing. Slice and pile high on a hoagie or sausage roll with thinly sliced onion and dress with a "horsey-like" sauce and bbq sauce.

3-6lb Eye-of-Round. You can use other "round" cuts (Top round, bottom round - traditioally very tough cuts.)
On the slicer: I also use this when slicing homemade bacon and it was not that expensive when you compare that most people replace their $99 slicer every 3-5 years. Mine is now at least 10 yrs old. -
They do require a good bit of storage space though.onedbguru said:

Takes me back to my late 20s, leaving bars in Fells Point at 2:00 and having a pit beef cart awaiting the revelers.
The bar carts served them on Kaiser rolls with raw onions and horsey sauce. You just made sure your date had one too.

Was kidding. On most "best of" lists, Chap's is cited as "best pit beef," and oddly, sometimes "best bbq," in Maryland. Chap's happens to be situated pretty much in the parking lot of TGC. I live in Harford.onedbguru said:

Saw Chaps on Triple D, had to make a stop on the way down to NC from NJ, Did not realize from the episode it was in a Gentleman's Club parking lot. My wife and daughter we little shocked to say the least. But well worth it and have been back many times since. If your near it, well worth the trip.JohnEggGio said:

I need to make this. I don’t have a Joetisserie but I’d cook it indirect and then maybe reverse sear. I have a small slicer. Looked up how Chaps does it and found this;

from what I have seen. most will do a direct cook. I would have probably used that method had my son not given me the Joetisserie, but since I had it, I might as well use it
we put half of that pan in the freezer for later and I will finish up the first half today 
The trick to the meat is being able to slice it paper thin. Any thicker and it is a tough chew.
Product recommendation:
The Avantco SL309 or SL310 is not much larger than the "Chef's Choice" slicers, and given everyone I know that had one eventually had to throw it out and buy another one. So, if you are going to buy a slicer, get the SL309 ( 9" cut) or the SL310 for about $100 more and you will only need to buy it once. They are sturdy and all metal and the blade is still razor sharp - even after 10 years or so.... It comes with a sharpener that I have never used. -
nice cook . . thanks for bookmark !! I just used used my Joetisserie last night to spin 6 chicken breasts. I squeezed them tight in a metal basket and they turned out excellent . . super easy too. Its a fun toy. Cant wait to spin some pit beef !!Columbus, OH
