New Year’s Smoke

Smoked a couple briskets overnight and 8 racks of ribs.
For the ribs, I moved from a full spare to a St. Louis Saw Cut rib. The time alone I saved on trimming made this worth it, plus I just prefer STL ribs.






For briskets, I just tested out a All Natural Prime Angus brisket. I’m a fan and definitely prefer them over my Prime Black Angus briskets. Cen Tex knew I would love it. Lol
It felt really good throughout the smoke and was the best feeling brisket I have pulled out of my Alto Shaam to date.
