As others have confirmed, you are fine. I get a boneless rib roast every year at least two weeks prior to Christmas. I roll it in spices and wrap it tight in cling film before returning to the fridge. A couple days prior to the cook it gets pulled out of the film for some dry aging in the fridge. Never not yummy.Michiana, South of the border.
