Winter coming on - it's soup time!
RRP’S GOURMET CHICKEN, VEGETABLE & CHEESE SOUP
2 pints Swanson vegetable broth
1 pint Swanson chicken broth
3 medium potatoes, peeled and diced
2 large cooked chicken breasts - well chopped or shredded (your choice!)
1 cup chopped onion
2 T parsley flakes
2 cubes chicken bouillon
40 grinds fresh black pepper
1 tea salt
10 oz bag of Birdseye Steamfresh mixed vegetables thawed (dice the big chunks of green beans and carrots!)
2 cans Campbell’s cream of chicken soup
1 pound Velveeta cheese
In a large sauce pan parboil the diced potato cubes and chopped onions in water, but then drain.
In a Dutch oven combine the broths, potatoes, onion, mixed vegetables, parsley flakes, bouillon, salt and pepper and cook on low heat until tender. Add the chicken and stir well! Add cream of chicken soup and Velveeta, cut into small chunks. Stir often until cheese is thoroughly melted. Reheat and serve.
Makes a bodacious hearty soup! I freeze it in pint size Food Saver bags.

Here is an excellent vegetable soup. Healthy too! Takes about 30 minutes, no meat required. All sorts of veggie substitutions or additions work here. Give it a try.

italian sausage balls and kale, visual recipe, notice that all the herbs are in the fennel italian sausage. i notice i bought carrots with green tops, those would be in the soup as well added last with the kale

I just made a take on Ron’s soup but chicken n dumplings:
easy and dynamite!
chicken broth
shredded chicken breasts
cream of chicken soup
frozen corn
frozen pepper trio
Salt n peppa
bag of biquick for the dumplings
can of water
Add all but bisquick to the pot and bring to a boil. Mix bisquick, roll out and cut....throw them into the pot and simmer a few minutes.

If you have an instant pot you should use it for soup!
- After you finish a chicken ( we don’t usually use chicken off the bge because it makes the soup taste a bit Smokey), use the carcass for the broth.
- Roughly chop up onion, carrots and celery. Sauté in the ip until soft, pitch in some garlic, herbs and anything else you might want along with the carcass. High pressure for an hour will make a great broth.
- Strain, remove the meat from the carcass and make a mirepoix. Sauté that for a couple of minutes, add the broth, chicken meat ,some rice ,potatoes or noodles and anything else you might fancy. Taste the broth, sometime adding some bullion makes it taste better. Once you like the taste give it 6 minutes at high pressure. Fast release the pressure an enjoy with some chopped green onions and parsley in the bowl

Ron, I too made your ham-n-bean soup, with a couple minor changes:
1. Used pinto beans as that's all I had,
2. Used dark soy sauce as I had no "Kitchen Bouquet", and
3. Cooked the "Method 2" beans and the hamhock overnight in the slo cooker, added the sauteèd veggies and spices first thing this morning.
It was in the 20's this morning when I got up, light dusting of snow outside, and when that aroma hit me in the kitchen, I was very, very happy. A great soup!_____________Tin soldiers and Johnson's coming...

@GlennM swmbo makes broth in instant pot all the time. Agree on no bones from smoked chicken, makes broth/soup too smoky for our liking. Not sure if you're doing this already... add couple of TB of apple cider vinegar in the mix, supposedly helps extract the goodness.canuckland
