Spinach and mushroom smoked mac 'n' cheese

Or as it's also known, clear our the fridge mac 'n' cheese. I made this with some smoked cheddar and Red Leicester, and threw in some Mexicana cheese that added heat and chilli flavours. Went well with some reverse seared ribeye. Here's the recipe:

Baked mac and cheese is supposed to be made in a beat-up, dented square pan....but other than that and the over-the-top gourmet cheeses, I'd definitely hit it. Well done.

Thanks bud. The cheeses were smoked about a month ago and stored vac sealed in the fridge in order to let the smoke flavours integrate. With Red Leicester especially, using it the day after smoking can give a slightly acrid taste.caliking said:Most excellent. Wonderful presentation, too.
