I love how the Egg can maintain a temp for hours with no assistance at all. 
Last night’s cook proved to me why I love my Big Green Egg XL. I started a brisket cook at 7pm. By 8:10 I was confident temp was stable and a 13# trimmed brisket started it’s journey. I set a few alarms overnight to check the temp. At 5am the brisket was wrapped and as of 7am I have never adjusted the vents and the temp never moved from 270 (+ or - 5 degrees). Truly amazing. The flat is almost probing like butter so I am checking every 15 minutes. 
A shout out to lousubcap for sharing his notes on a brisket cook, that was a big help.
