Wife just gave the go ahead to get a 28" Blackstone. Never used one before, besides breakfast and Philly CheeseSteaks, what else can you cook on it? Should i get one????

I’m on the opposite side of the coin. I had a 36”, sold it. Then bought a 22” table top,used it a few months and gave it to my brother. I found I used them at 1st but hated cleaning them constantly. They are fun, but where I live it’s humid all the time so I dealt with rust constantly. I might get another 22” if we went camping all the time or something but currently we don’t. Id much rather get the largest cast iron or carbon steel skillet I could fit on my egg and use it.

yeah, a bit of an exaggeration. 2 to 3 pounds shaved beef a week would be close though. at camp anything cheap and quick that feeds some drop bys and marinated beef if theres extras for lunch out of the wok at home.

Blackstone's are great. I had a 36" for several years. Eventually replaced it with a disc cooker that also allows me to deep fry and make chili/stews

I love my Blackstone, I use it a few times a week. We make burgers, Fried rice, stirfry noodle dishes, breakfast, and lately a rip on Taco Bell‘s Mexican pizzas.
One other great use is when you’re doing a reverse sear, no need to wait for the grill to get hot just toss it on the Blackstone

Absolutely check out @tarheelmatt's YouTube channel as mentioned before. Todd Toven also puts up some good videos as a member of the Blackstone team. If you are a social media kinda person, just start following pages related to Blackstone and let the algorithms take over.
I seem to use my 28in Blackstone a lot more than my eggs during the week. It heats up fast and I can knock out great meals in no time.
Some usual items include: eggs (fried or scrambled), bacon, hot breakfast sausage, breakfast burritos, omelets, french toast, pancakes, sautéed veggies (broccoli, asparagus, onions, bell peppers and hot peppers), fajitas, burgers, jalapeno poppers, hotdogs, beer brats, quesadillas, mahi-mahi or any fish, shrimp, scallops, kabobs, fish tacos, tacos, stir-fry (rice or noodle), potatoes (french fry, hashbrowns or wedges), grilled cheese, steaks, grilled chicken, cheesesteaks, and homemade roasted salsa.Large - Mini - Blackstone 17", 28", 36"

If you can fit a 36, I would go that route. 4 burners, not 2. Much more flexibility. Get the one with the gas grill style lid. They have come a long way. I have had a first gen 36, then a 17, 22, and now a 36 again. I still have the 22 for traveling.

I cook on mine frequently. Mostly brunch. Potatoes, breakfast sausage, eggs, peppers, onions, etc. I do fried rice, pancakes, French toast, smash burgers, fajitas, bacon bacon bacon, pad thai. I know I'm leaving something out...
Oh I like buying the raw tortillas from Costco and cooking them on griddle.
Or using tortillas as crust and doing personal pizza for kids.

Don’t forget what a large CI on top of the Egg will bring to the party.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
