2 Tone Spatchcock Chicken with Smashed "IPA" Potatoes & Prosciutto wrapped Asparagus

A buddy sent me his rub to try and I decided to divide and conquer and sauced one half (wife wanted sauced bbq chicken) and left the other side as is but with some white sauce at the end. I cut the backbone out and then out on a tray to sit in the fridge for a few hours til cook time to dry out the skin a bit. Seasoned it up with 10-15 minutes to go and then cooked on the Large at 325 or so til breast hit 160ish..
The smashed baby potatoes were boiled til fork tender and then smashed (with a whiskey glass) to about 1/4 inch thick. I seasoned them up with Dizzy Pig's IPA seasoning and put them on the mini indirect until they crisped up. Once there, I added some parmesan cheese for a few minutes. These were soooo good. Serving with a seasoned up sour cream dip bowl.
Turned out to be a delicious meal and the leftovers made for some good lunches.
