Chicken Leg Rub - ?

Bride of Teefus and I will be doing chicken legs this week. I picked up a leg rack and it made a big difference. A always brine prior to Egging. Looking for a game changing rub. Whatcha Got?

    Older post, but I figured this would help someone else, works great for mine.

    Dust legs or wings, place in refrigerator for an hour or two before cooking.

    • 1 tbl baking powder
    • 1 tsp paprika
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1/2 tsp dried thyme
    • 1/4 tsp dried oregano
    • 1/4 tsp cumin
    • 1/4 tsp kosher salt
    • 1/4 tsp ground black pepper
    • 1/8 tsp cayenne pepper

    Let's see if this copies from my recipe stash.

    Spiced Turkey Legs

    Morrocan Spice Rub

    1 Tablespoon cumin seeds, ground

    1 Tablespoon coriander seeds, ground

    1/2 Tablespoon fresh ground black pepper

    1 tsp cinnamon

    1 tsp ground nutmeg

    ¼ tsp cayenne pepper,dried

    Makes about ¼ cup, store in a glass jar in the fridge


    Basic brine

    ¼ cup salt

    ¼ cup sugar

    1 gallon water

    Heat salt, sugar, and water till all is dissolved and let it cool


    Honey Glaze

    ¼ cup honey

    ¼ cup red wine vinegar

    2 tablespoons olive oil

    2 cloves garlic, minced.

    Mix all together in a glass jar and let sit for a while, shake before use.

    Soak 4 turkey drumsticks in the brine and refrigerate while in the brine between 4 and 12 hours

    Take them out and dry them. Brush with olive oil then coat with a tablespoon of the spice blend.

    Grill the legs over low heat, turning a couple of times for 45 minutes.

    I imagine that it would work for chicken.

    Oh! Use the glaze a few minutes before they are done.
