Beef Fat - any uses?

I save my bacon fat and use it for a lot of things.
Do any of you save Beef Fat and if so, what do you use it for? I toss a lot of it, and would prefer to use it for something. Maybe fry french fries in it?

Back in the early days the reason McDonalds fries were so awesome is they were fried in tallow (rendered beef fat). When they were forced to switch to vegetable oil by well meaning but misguided organizations, the quality went down noticeably, despite McD spending several years trying to keep the flavor the same with a different technique.Cincinnati, Ohio. thats the reasoning they pushed but i bet the veggie oil was less expensive and more profitable. i hate their fries now

I make meathead’s “beef love” from amazing ribs.com. I brush it on various beef items just before they hit the grill instead of oil. I also cook mushrooms in it, which makes them super umami bombs.

I rendered a bunch of brisket fat a couple years ago and primarily used for cooking breakfast potatoes and hash browns.

Should I strain the fat, or just let it settle out like I did and use the nice solid fat on top? Is there a secret to it?
