First Brisket Cook was a success

Have had the egg about a year and did a small 8lb flat.

Sams had choice but no prime that day.

Egg held rock steady at 250 grate, 290 dome for 9 hrs, couple of hours in the cooler.

Everyone loved it, tender not dry.  But more moisture will be the goal on the next cook.
I injected with beef broth and used a water pan.

If you're on the fence about doing a brisket, go for it, it is not as difficult as you might think.

    Way to get after it.  Great result right there.  Congrats.  I would enjoy that right now.  
    Around here ( and most places I have checked) you can get the full packer and likely twice the weight (pre-trim) for the same or less $$ than the trimmed flat.  The packer gets you the point (brisket heaven) and more fat protection.  FWIW-
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
