Vietnamese Lemongrass Chicken and Noodles

Marinated some skin on boneless thighs in lime juice,fish sauce, soy, garlic, brown sugar, veggie oil and lemongrass.  

On the small at 375 direct 


Made a  Nuoc Cham dressing with fish sauce, soy, lime juice, chopped garlic, sugar,Birdseye chilies and little water.   

Served up on a bed of lettuce, vermicelli noodles, cuke and carrot stick and radishes.  


Unreal flavors in the chicken after it marinated for 4 hrs and the Nuoc Cham
hit a Unami note that was really good.  Lots of vibrant flavors and textures in that bowl.
