The Best I've Ever Had

This was a first for me. DeBraggo double bone in pork chops, about 1.5 inches thick. I applied a generous coating of Dizzy Pig and a Cinnamon Apple rub.



I set the medium Egg for about 350. Some recipes call for it hotter, but there's at least 15 minutes cooking so you don't want too much char. I flipped them about every 6 minutes or so.  Pic below shows the first flip. 



Pulled off at 150 and let rest for about 10 minutes. 




Just enough pink for our tastes.  Without a doubt, these were the tastiest, most tender chops I have cooked.  And, for those wine nuts out there, paired with a 2004 right bank Bordeaux.  Light enough to not overpower the meat, but enough body to stand up to the grilling. 



And, two rib bones as an added bonus!
