The Best I've Ever Had

This was a first for me. DeBraggo double bone in pork chops, about 1.5 inches
thick. I applied a generous coating of Dizzy Pig and a Cinnamon Apple rub.

I
set the medium Egg for about 350. Some recipes call for it hotter, but
there's at least 15 minutes cooking so you don't want too much char. I flipped them about every 6 minutes or so. Pic below shows the first flip.

Pulled off at 150 and let rest for about 10 minutes.

Just enough pink for our tastes. Without a doubt, these were the tastiest, most tender chops I have cooked. And, for those wine nuts out there, paired with a 2004 right bank Bordeaux. Light enough to not overpower the meat, but enough body to stand up to the grilling.

And, two
rib bones as an added bonus!

XL and Medium. Dallas, Texas.
