Do you usually trim the heavy fat like you would do a brisket???

Yes. I trim all the fat from beef ribs. There is a nasty layer of silver skin under that so that needs to go too.Keepin' It Weird in The ATX FBTX

I find the membrane easier to remove than the one on their pork cousins.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
