Sunday SRF Tri Tip

That about says it. 2.9 lbs, expecting leftovers for the WFH week. Rubbed with AlbuKirky red chile, amped up with cumin, garlic powder and cayenne. Thinking reverse sear is the way to go, but open to suggestions from the tri tip gods. Definitely don’t want to screw this up.

I did a tri tip yesterday. Reverse sear. Cooked at 250 till 115 (about 90 minutes for me), wrapped for 10 minutes while I cranked the heat up to 500, then seared 2-3 minutes per side. Let stand for 10 or so before cooling. I screwed up the flavor by accidentally torching a wood chip when I did the sear, but it was cooked perfectly.

Yup. No cilantro bc I live with people who claim an aversion to it. Store-bought parsley, home grown oregano, lots of garlic, shallot, serrano pepper, evoo, and red wine vinegar.
