Not sure what went wrong - Ribs

Not my first rodeo on ribs. The flavor was on point first off! Mustard base, a light dusting of ground coffee and the main rub was a kroger product. Nothing special....The top of the ribs were excelent but the bottoms and lower sides really got over cooked and dry. The egg got a little hot on me at first. 400 dome, but i brought it down and maintained 300 for the duration of the cook. Rode naked the whole way total cook time was about 4 hours. I didn't do anything different from normal routine other than temp spike, maybe the plate-setter was too hot?

    Yes.  You got radiant heat off the platesetter onto the bottom of the ribs.  I've done that before.  If you are going to cook at over 300 degrees, it is best to use a drip pan - preferably spaced off the platesetter with some air between them (I wad up some aluminum foil the size of marbles).

    I use a drip pan that I added to an order from CGS. Worth the $15 and topping with foil makes cleanup easy.

    I had the same thing happen to me last weekend!  Sometimes we fail for no good reason.

    I have one of these pans but have been hesitant to use it. It seems it would block off much of the airflow from the firebox to the dome as it extends out over the open areas of the plate setter. You've had success with yours?

    I’ve got the 14” & 16” like what is linked about.  The 16 gets used for low heat cooks that I need the coverage.  I really believe that on higher heat cooks that the size of the pan is to big and pushes the heat more to the perimeter of the egg and messes with band adjustments.  Once I started using the 14 for above 300° cooks my bands seemed to not get out of whack as much.
