Chicken Souvlaki & other weekend delights!

Enjoying the weekend off and the beautiful temps so I pretty much cooked on the eggs for the entire weekend between gardening and house cleaning chores.
Friday afternoon I marinated some cubed chicken breasts in olive oil, garlic, oregano, kosher salt, black pepper, juice of one fresh squeezed lemon. It marinated in the fridge for about 4 hours until I just had to eat... placed them on soaked wood skewers with red onion between the chicken. Grilled direct at 350* with a few turns as required until the chicken was done. Toasted up the pitas and then slid the kabobs into the folded pita. Added fresh chopped parsley, sliced red onion and cherry tomato, baby arugula and romaine lettuce. Topped it off with some fresh tzatziki sauce, partnered it up a side Greek salad and dug in! Love the flavours this bundle of joy can pack inside of it.






Here are a few other highlights of the weekends grilling adventures

5 oz beef burgers, monterey jack jalapeno cheese, lettuce, tomato, sautéed onions, bbq sauce and a brioche bun

Chicken Fajitas, sautéed onions and bell peppers, grilled chicken breast with dizzy dust, rice, salsa, cheddar cheese in a whole wheat tortilla

My favourite warm weather Eggin companion, the Mojito!

Baby Back Ribs are 3 hours in of 5 now for my weekend finale! Time to tuck them into their tin foil home with some butter, brown sugar and beer for the next 60-90 minutes!
