Stuffed Pork Chop Question

Picked these up at Central Market over the weekend.

Want to throw a few pecan chips in the Egg and give it a nice flavor boost.

Direct?

Indirect?

I was thinking I'd put them in a cast iron pan at 350 until 140 temp.

  • My usual MO is just direct sear and then indirect until correct IT. This being said, those toppings would give me pause. Might be better to go indirect all the way to preserve the awesomeness.

    Do you think the cast iron pan is enough for the indirect part?

    I want to throw a couple ears of corn on and some sliced pineapple as well and I think they need direct heat.

  • Indirect in the CI pan is fine. 

    When I’m cooking indirect and need some direct heat, I sometimes just put the subject products in the gaps not covered by the shadow of the plate setter. Works great.
