spicy Pineapple Head cornbread calzone

It's been interesting lately at the supermarket, I haven’t seen a bag of flour in around 6 weeks now, it & all of the yeast was wiped out apparently with the toilet paper.  I had some of my go to flour on hand, KA bread flour, but it’s long gone.  A couple weeks ago I wanted a calzone so I gave a box of Jiffy cornbread mix a go as a substitute, worked out pretty good, great flavor.  Not exactly a proper dough but I didn’t expect that.  I’d do this again even after the flour is available.


about 2 teaspoons of the rub into the dough along with the yeast


it took a few hours to double in size on the countertop


it didn't really want to stretch with the usual hand toss/stretch methods I'm used to so I rolled it with a pin


meanwhile some more of the rub into the onions.  By the way if you're a fan of the original pineapple head this new version is excellent


along with some black pepper


a little dizzy dust on top


I didn't do this on the egg, just popped it in the oven at 400, took about 15 minutes


the dough was good, sweet, and the yeast gave it some texture beyond normal cornbread & held it together too


I suspect with other new shortages coming down the pike we'll all be mixing up some new concoctions.
