I have about 2lbs of leftover spare rib meat. I need some good ideas of what to do with the leftovers. I usually make tacos, quesadillas, or put it on pizza. Anyone else have anything clever?

Just finished off the meat from my first packer brisket. Not enough of us in the house to eat it all in the first couple days, so I ended up doing a chili first part of the week and then brisket beans this weekend. If you're tired of sandwiches these are good ways to use up the good stuff.LG BGE
