poster
Posts: 1,289
I have a couple catfish fillets that are marinated in the stores cajun seasonings. How would you cook these? Usually when i grill i have the skin side down, but no skin here. Im trying to avoid frying also. Catfish is very unfamiliar to me as well, think ive had it once before maybe

Courtboullion, without a doubtThe problem with a problem is that you don't know it's a problem until it's a problem, and that is a big problem.

Choupique recipe, if you ever get your hands on choupique, this is a good one. Scale the fish and season as you would for baking fish. Set the whole fish in a greased baking dish. Place potatoes and carrots around the fish in a liberal manner, onions go well also. Bake the dish @450deg for one hour. Remove from the oven, remove the fish and throw in the garbage, eat the vegetables. Bon appetite! The problem with a problem is that you don't know it's a problem until it's a problem, and that is a big problem.

To really bring out the flavor of catfish I like to marinate it overnight in a bowl of mud, then season with clumps of mud followed by a shallow pan-fry in clarified mud. Serve it along side a nice pan sauce of mud.South of Nashville - BGE XL - Alfresco 42" ALXE - Alfresco Versa Burner - Sunbeam Microwave
