From the habanero sauce that I make, the carrot certainly adds color, but the primary reason I use it is a filler. I can make an orange sauce that maintains the color, without being screaming hot. The first habanero sauce I ran across many years ago was called "Agent Orange" it had a lot of carrots and garlic, It was beyond scorching hot. -

I got the sauce shipment just before dinner tonight! Unfortunately dinner was lo-mein takeout that really didn't go with the sour Habanero/Aji sauce,BUT I also got a small container of the GUAJILLO & RED JALAPENO! Holy heck that stuff is good. They only had the small bottles and I ate a third of it on one meal. Great stuff. It' like a more flavorful Sriracha, but a little less spicy. Excellent!LBGE/Maryland -
Here is what I have at the moment. I am waiting on a mix 4 pack from Burns and McCoy to arrive. I've also made a few batches of homemade chipotle hot sauce.

The show sounds kind of lame but I throughly enjoy watching it. Sean Evans is a natural host and one of the best in the business. It's worth checking a few out if you like wings and hot sauces.
